chore(deps): Bump mongoose in integration tests

[chargome]

• The OTel instrumentation supports mongoose >=5.9.7 <9, so 6.x is fully supported
• Our test usage is basic (connect, Schema, model, save, findOne) with no breaking API changes between 5.x and 6.x
• Mongoose 5.x is EOL and won't receive security patches
